Dan Watkins is his name, and mead is his game. If you’re unfamiliar with the millennial alcoholic beverage brewed from honey, you might be in for a treat when Ozark Viking Meadery finally hits the shelves in local stores. local shops and bars including Wells Package & Gun, The Saucy Chook Pub and Screen, JB Malone’S and Whispering Pines.

Watkins has said he believes the first batch will be finished around Christmas this year, but there’s really no way of knowing for sure.

“Making mead is more of an art than a science,” Watkins said. “Each batch is a little different. It will be done when it is done, ”he said. “Sometimes it takes six months and sometimes eight,” he said.

“If I could put in a shotgun and force the mead to be done on a certain date, I would,” he said. “But that’s not how it works.” For now, Watkins and the rest of us will just have to be patient.

“I make mead the old-fashioned way,” said Dan Watkins, owner of Ozark Viking Meadery, now operating at 407 E. Fourth Street (in the basement below Grace Harbor). “The way the Vikings or Brother Tuck did it.” “

Before turning pro, Watkins was an amateur mead maker for over 20 years. During this time, he became more and more popular among his friends as he perfected his art.

“I do a good booze,” Watkins said with a shrug and a joy in his eyes.

“I did this for family, friends and neighbors to go on barbecues and float trips,” Watkins said. And his brew was always popular when he shared it at American Legion barbecues. However, originally Watkins had no intention of making mead for a living, but once he started winning brewing contests with his mead he realized that maybe there was something in this mead-making business.

“I found out that I was a little better than I thought I was,” Watkins said. “My blackberry mead won a brewing competition at the St. James cellar.

“Mead is the oldest alcoholic beverage known to man,” Watkins said.

Watkins explained that people most likely discovered the fermentation process by accident when wind or rain damaged a beehive in nature, letting rain in. The necessary yeast had to be in the air, causing the natural fermentation process and the beehive was then harvested. Eventually, people started doing it on purpose.

“People have been making mead for thousands of years,” Watkins said. In fact, it has a recipe that dates back to Viking times.

“It contained a lot of herbs that I had never even heard of,” said Watkins, but that didn’t stop him from acquiring them to make mead. Watkins said a Christian monk who traveled and lived among the Vikings for several years recorded the recipe. This recipe has been passed on and it will now be one of the products Watkins will offer. This is also part of the inspiration for the name of the mead.

“It will always be a bit of a Viking theme,” Watkins said.

With Viking beer and award-winning blackberry mead, Watkins is known for making orange blossom, wildflowers, strawberries, apples, and more traditional vanilla and cinnamon.

Mead is its own category of alcoholic beverage. Similar to other alcohol categories like wines, beers, and liqueurs, mead offers a wide variety of flavor profile options. “Everyone is going to have their favorite because everyone loves different things,” Watkins said. “I have people who would practically kill for a little of my orange blossom mead, but others prefer cinnamon and honey.” Watkins said that Queen Elizabeth I loved her mead cut with whiskey. “She loved that grain alcohol taste in hers,” Watkins said. Watkins’ mead will contain between 13 and 18 percent alcohol. This is for several reasons. This is what his liquor licenses will allow him to do and that way he will be able to ship using Fed-Ex because his mead will be non-flammable.

You have to have good ingredients to start, ”Watkins said. “You have to wait a few months for it to really turn into mead, and then it just keeps getting better,” Watkins said.

Watkins said his method is simple. “I put my heart and soul into every bottle,” Watkins said.

“I love to make mead and I love to see the look on people’s faces when they really like it.”

Watkins is cautiously optimistic that the mead will be ready by Christmas, but he can’t promise the exact date when it will be finished.

“I’ll know when I stir it up and taste it,” Watkins said. “I won’t sell it until it’s ready.”

Vendors from Longview and elsewhere in the region showcased their handmade creations, crafts and delicacies on Saturday at the Holiday Market, which closed the season at the historic Longview Farmers’ Market.

Marisa Guillory said she came to the weekly market at the corner of High and Cotton streets specifically for the macaroons made by Milk & Cookies Bakery.

“I go out most weekends,” Guillory said.

Mary Joe Murphrey said she and her husband regularly go to the farmer’s market to buy pork chops and blue cheese.

“We come a few times a month,” said Murphrey. “There are special things that we like to buy.

Various seasonal foods, snacks and condiments were offered at the special Saturday holiday market.

Zareen and Sami Kahn, who run Chill’um, have brought a plethora of Greek and Indian inspired dishes.

“We have braised lamb with hummus and tabbouleh sauce that was all gone in the morning,” Sami Kahn said. “So we have all of these cakes today (that) we usually don’t. “

Zareen Kahn said she made fresh fruit pastries, cream cheese brownies, pumpkin cake and orange milk cake for the holiday market.

Claude Hammond of Wo Wo Joe Coffee gave away cold brew kits wrapped in festive ribbon, which he said would make a “great Christmas present.”

Hammond, who said he learned about roasting espresso in Italy, came up with a holiday drink recipe that uses cold brew coffee.

“If you want to make an awesome fall and winter drink with cold coffee, you mix it with heavy cream. You put in pumpkin puree, you put in pumpkin pie spice, a little brown sugar, and you pour it over ice, ”Hammond said. “It’s fabulous, and better than a spiced pumpkin latte at any drive-through cafe. That’s really nice.”

Terry Wright, who runs Bee Wright, offered a variety of spicy and flavored honeys as well as mead.

In addition to flavors offered year-round, such as blackberry, peach, and pear, Wright also sold seasonal mead, such as cranberry.

Niki Latiolais said it was her first time visiting the Farmers Market and coming to support friends who run Greer Farm in Daingerfield.

She bought beef jerky from the Greer Farm stall, which her daughter, Logan Latiolais, said was “really good”.

Madeline Clairborne and her husband Jalen said they are also coming to the farmers market for the first time.

“In fact, we moved to Longview four years ago and had never been to the farmers market before,” said Madeline Clairborne. “It’s always been on my to-do list, and never has been, so I thought the vacation market would be a good place to try for the first time.”

She bought local honey from Bee Wright, whom she says always looks for.

“My daughter has allergies, so the local honey kind of helps regulate her allergies,” she said.

The historic Longview Farmers Market is expected to return next year.

Andrew Tracey, Fitness Editor for Men’s Health is about to undertake a monumental task. He’ll complete 24 CrossFit Hero WODs within 24 hours for year four, but he’ll add an ultra-marathon as an extra challenge, according to a profile originally posted in Men’s Health.

The details: Tracey to launch the Herculean business in rural Essex at 10:00 a.m. local time on Saturday, November 20. He will complete all 24 Hero WODs by 9:00 a.m. local time on Sunday, November 21. Tracey will score miles between each of the CrossFit workouts to reach her ultimate goal of completing an ultra-marathon.

  • Tracey Won’t Just Finish These Workouts In A Gym. Each portion of the ultra-marathon will continue a journey between Stansted and Stratford. His Hero WODs will take place at different locations along the course.
  • Tracey’s last practice – Murph – will take place in the Olympic Park in East London.

Tracey to debut with James Prosser’s 100 muscle-ups before facing Nate, who includes some more muscle-ups. The program continues with Hidalgo, Jerry, DT, Ricky, Mead, Bert, Joseva, Oz, Burgess McLaren, Bolger, Smudge and Jordan.

Rhythm is essential: Tracy’s past efforts to complete 24 Hero WOD in 24 hours has always included a mix of longer and shorter and intense workouts. The mixture would give it extra time every few hours to refuel and recharge. The 2021 iteration is a different beast.

  • Tracey will have to walk two or three miles between each workout to nibble the distance of the ultra-marathon. If a Hero WOD is 50 minutes long, it will only have 10 minutes to cover that distance before starting the next workout.

“Discomfort is not within the four walls of a gym” Tracey told Men’s Health. “It’s just a bit of hard work… It’s about putting myself in an unfamiliar situation where I can’t stop. And this year, more than ever, will reflect it, because the slowdown will have real consequences. It’s s- or bust. Either you get to the next one or you don’t.
